Macaroni & Tomatoes

It was one of those nights: I didn’t feel good, baby was fussy, everyone was hungry. So I made Macaroni & Tomatoes..super simple.

We ate this growing up a lot and while it’s nothing special it hits the spot when your hungry.

I really like it with stewed tomatoes (which you can cut up smaller if you don’t like the big chunks…I don’t like them big) but tonight I didn’t have any so I used what I had on hand a can of fire roasted diced and a can of diced ones with oregano, basil, and garlic added. If you had plain ones you could just add your own seasonings.

Macaroni & Tomatoes

1 box elbow macaroni

2 cans of stewed tomatoes or diced

2-3 Tablespoons of sugar

sprinkle in some sea salt

sprinkle in some pepper

Boil elbow macaroni until done. Drain. Add tomatoes and seasonings mix until heated through.
